Bratt Pans

Bratt Pans are large, deep rectangular cooking pots that come with a counter-balanced pull-down lid. The heat source comes from the base of the pan, and this can be an electric or gas connection.

These pans have a feature whereby tilting the pan via the hand-driven or electric mechanism, the cooked food is poured into containers through the V shape in the top of the pan.

These cooking machines have a multi-function use, like browning off your meat with the pan set at frying temperature with the lid open, adding in your liquid, then temperature turned down with the lid closed to braise your meat softly. Also great for preparing sauces and soups using the multi cooking temperature modes.

Bratt pans are a versatile piece of high production equipment. They’re equipped to perform eight cooking functions: boiling, steaming, braising, poaching, stewing, roasting, shallow and deep frying. Note that not all models are suitable to do all functions. Check your model specification to see what is possible with your machine.
