Anyone who owns any kind of food, restaurant, café, bar, school, or healthcare facility knows how important a commercial dishwasher can be for everyday maintenance, customer satisfaction, and overall cleanliness. As a powerful machine that can sanitize glasses, cups, trays, utensils, and any other kind of serving tool, commercial dishwashers simply takes detergent solution and provides a fully sanitized finalized result in a timely and efficient manner.

So how does one exactly use a commercial dishwasher? Let’s look at it in-depth below.

What is a Commercial Dishwasher?

A commercial dishwasher, also known as a warewasher or warewashing machine, is an industrial dishwashing apparatus that enables owners to wash dozens of pots, pans, glasses, and so forth at once. Using a water churning machine, the commercial dishwasher is able to cover any ounce of the cups and utensils therein.

Every commercial dishwasher goes through the same cycle while cleaning, from filling and operating, to washing, to draining and finally cleaning. Once it’s all done, you can then remove all of the items inside, place them back on the shelves, and get back to work.

Filling the Commercial Dishwasher

It’s important to always check if the drain is closed while placing items into the commercial dishwasher. When it’s ready to operate, press and hold the fill button until the machine is full. You will know it’s filled when the water is about two inches from the bottom of the pan. Then, check the temperature to ensure it’s in the proper operating range. Generally, the water should be between 140 and 155 degrees. Also be sure to check that there is enough detergent. Add in a rinse additive and sanitizer before proceeding with the next step.

Loading the Dishwasher

Now that the commercial dishwasher is prepped and ready for washing, it’s time to sort and place all dishes, pots, and pans inside appropriately. The plates should be stacked together, from small to large. Always pre-rinse the dishes before loading them, since commercial dishwashers cannot get every little crusted food spot off of every plate.

Close the door and push or hold the start button for three seconds. Once done, remove the rack, loading in glasses and cups into the proper racks for a second washing. Repeat this process, twice, for flatware according to code.

Draining and Cleaning the Dishwasher

Once you’re all set with the pans and dishes, ensure the power is off. Open the door and pull up on the drain ball assembly. Remove the pump screen, using pre-rinse to clean the screen. Once clean, put the screen back into the dishwasher. Also remove and clean the accumulator tray. Lastly, check the lower and upper wash arms for any excess debris, removing the items as necessary.

Always try and run a full load with every commercial dishwasher cycle, as these machines use a substantial amount of water and power in each rinse.

Troubleshooting your Dishwasher

Like any mechanical item, over time and regular use, parts can become worn out and can cause problems to arise. Sometimes these problems can go unnoticed causing other issues, such as water damage from leakage and often such problems put dish washing to a halt in your kitchen. For this reason it's important to have your appliances regularly serviced to avoid such disasters.

Common dishwasher problems are leaking, failure to drain, fill or wash correctly or simply failing to start at all due to a faulty door switch or control timer.
